Is there a way to add a field to a customization without using a user field?

Yes, you can add any field to the screen which exists i n the relevant tables,  at the the correct level (batch, document, transaction etc..), but you cannot add a filed that does not exist without creating a new table, and using the VB  to make the correct joins and update sequences.

There are a few options here.  Are you planning on storing this data or just using it on the form for calculations and such?  If you are storing the data, you could create a hang off table and add it to your form.  You could also check the form's existing tables to see if any future or id_01(etc.) fields exits, but this is sometimes causes risk for problems when upgrading.  If you only want the field on the form for on the fly calculations, you could use an unbound field.  If you have any questions regarding this, let me know.
